How to get into Final fantasy

So I have heard lot's about FF over the years and with Rebirth most probably being a game of the year nominee so I am thinking of getting into to this series but I don't know where to start because the old titles seem to old for my tastes but according to most people that is where i should start so what are your thoughts??

I started with Final Fantasy VII Remake on PlayStation 4. Great game and even better on PlayStation 5 with the remaster which improves the visuals/image quality and gets the game to 60FPS. I also completed Rebirth and Final Fantasy XVI base game. Need to play through the two expansions though.
